Savory Beef and Vegetable Soup
Ingredients:
2 pounds ground beef
1 onion sliced (small or large, depending on how much onion you want)
4 - 5 cloves garlic, minced
1 teaspoon dried oregano
2 tablespoons chili powder
1 teaspoon paprika
1.5 cups of beef broth, chicken broth, or water
14 - 16 oz of fresh tomatoes, chopped
1 - 2 carrots, sliced
8 - 12 oz of potatoes, cut up
2 tablespoons of apple cider vinegar
Salt and pepper to taste
Instructions:
Over medium heat in a dutch oven or pot, sauté the onion until translucent.
Add the minced garlic and cook until fragrant.
Stir in the ground beef and cook until browned.
Once the beef is browned, add oregano, chili powder, paprika, broth, tomatoes, carrots, and potatoes.
Cover and simmer for one hour, stirring occasionally.
After an hour, add the vinegar and simmer uncovered for an additional 20 minutes.
Season to taste with salt and pepper before serving.
Notes:
After simmering for an hour, you might need to add another ½ cup of broth if you want it to be more soupy.
